  • 2 cups spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the zucchini, spinach, ricotta, mozzarella, Parmesan, eggs, garlic powder, onion powder, salt, and pepper.
  3. Mix until well combined.
  4. Transfer the mixture into a greased baking dish.
  5. Bake for 30-35 minutes or until the casserole is set and the top is slightly golden.
