Zucchini Pizza Casserole

A delicious and healthy alternative to traditional pizza that the whole family will love.

Ingredients

  • 4 cups shredded zucchini
  • 1 cup marinara sauce
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1/4 pound ground turkey or beef (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix the shredded zucchini with olive oil, Italian seasoning, garlic powder, and egg.
  3. Spread the zucchini mixture evenly in a greased baking dish.
  4. Add the marinara sauce on top of the zucchini layer.
  5. If using, cook the ground turkey or beef until browned and sprinkle over the sauce.
  6. Add mozzarella and Parmesan cheese on top.
  7. Bake for 30-35 minutes until the cheese is bubbly and golden.
  8. Let cool for a few minutes before serving.

Notes

  • This casserole can be customized with your favorite pizza toppings.
  • For a lower-calorie option, reduce the amount of cheese.
