1 cup wild rice
4 slices turkey bacon
1 cup butternut squash, diced
1 cup Brussels sprouts, halved
1/2 cup dried figs, chopped
1/4 cup walnuts, chopped
1/4 cup olive oil
3 tablespoons balsamic vinegar
1 tablespoon honey
Salt and pepper to taste
Instructions
Cook wild rice according to package instructions until tender.
In a skillet, cook turkey bacon until crispy. Remove and chop into pieces.
Add butternut squash and Brussels sprouts to the skillet, sauté until tender.
In a large bowl, combine cooked wild rice, sautéed vegetables, turkey bacon, figs, and walnuts.
In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
Pour dressing over the rice mixture, toss to coat.
Serve warm or at room temperature.
Notes
Feel free to substitute other vegetables based on seasonality.
This dish can be made vegetarian by omitting the turkey bacon.
