White Chocolate Raspberry Dream Cake

  • 1 cup fresh raspberries
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 3 large eggs
  • 1 cup buttermilk
  • 2 teaspoons vanilla extract
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. Melt the white chocolate in a double boiler and let it cool slightly.
  4. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  5. Beat in the eggs one at a time, then stir in the vanilla.
  6. Add the melted white chocolate and mix well.
  7. In another bowl, whisk together the flour, baking powder, and salt.
  8. Gradually add the flour mixture to the creamed mixture alternately with the buttermilk.
  9. Gently fold in the raspberries.
  10. Pour the batter evenly into the prepared pans.
  11. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  12. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.

Notes

  • For an extra touch, drizzle some melted white chocolate on top of the cake.
  • Serve with additional raspberries for garnish.
