  • 4 cups vegetable broth

  • 1 teaspoon rosemary

  • 1 cup pastry crust, for topping

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions and garlic, sautéing until fragrant.
  3. Add mixed vegetables and diced potatoes, cooking for another 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and stir in the plant-based milk, thyme, rosemary, salt, and pepper.
  6. Let it simmer for 15-20 minutes.
