Vegetable Orzo Soup

Ingredients

  • 1 cup orzo pasta
  • 4 cups vegetable broth
  • 2 cups diced tomatoes
  • 1 cup diced carrots
  • 1 cup chopped celery
  • 1 cup chopped spinach
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, garlic, carrots, and celery. Cook until softened.
  2. Add diced tomatoes, vegetable broth, oregano, basil, salt, and pepper. Bring to a boil.
  3. Add orzo pasta and cook until tender, about 8-10 minutes.
  4. Stir in the spinach and cook for another 2 minutes.
  5. Remove from heat and serve warm.
