Thai Potsticker Soup

A warm and flavorful soup with homemade potstickers that the whole family will love.

Ingredients

  • 1 pound ground pork
  • 2 cups vegetable broth
  • 1 cup water
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, minced
  • 2 cloves garlic, minced
  • 1 cup carrots, shredded
  • 1 cup mushrooms, sliced
  • 2 cups bok choy, chopped
  • 1 package potsticker wrappers

Instructions

  1. In a large pot, combine vegetable broth and water, and bring to a boil.
  2. Add soy sauce, sesame oil, ginger, and garlic. Stir well.
  3. In a bowl, mix ground pork with shredded carrots and mushrooms.
  4. Fill potsticker wrappers with the filling and seal them.
  5. Drop the potstickers into the boiling soup and cook for about 5 minutes.
  6. Add bok choy and simmer for another 5 minutes until the vegetables are tender.
  7. Serve hot and enjoy!

Notes

  • Feel free to add other vegetables like snow peas or green onions for more flavor.
  • This soup can be made ahead and stored in the refrigerator.
