  • 4 slices turkey bacon, cooked and crumbled
  • 2 cups sweet corn, frozen or fresh
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the diced onion and garlic over medium heat until softened.
  2. Add the cooked shredded chicken and crumbled turkey bacon to the pot.
  3. Stir in the corn, black beans, diced tomatoes, chicken broth, chili powder, cumin, smoked paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
