  • 1/2 teaspoon black pepper
  • 3 hatch chilies, roasted and diced
  • 1 cup corn tortillas
  • 1/2 cup diced onions
  • 1/4 cup chopped cilantro
  • 1 avocado, sliced
  • 1 lime, wedges for serving

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chicken thighs and season with salt and pepper.
  3. Cook until browned and cooked through, about 7-10 minutes.
  4. Add roasted hatch chilies and onions, cooking for another 2-3 minutes.
  5. Warm corn tortillas in another pan.
