Spaghetti Squash Au Gratin

  • 1 medium spaghetti squash
  • 4 slices turkey bacon
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup heavy cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the spaghetti squash in half and scoop out the seeds. Place the halves cut-side down on a baking sheet and bake for 30-40 minutes or until tender.
  3. While the squash is baking, cook the turkey bacon in a skillet until crispy. Remove from the skillet and chop into small pieces.
  4. In a bowl, mix the cooked spaghetti squash strands with turkey bacon, shredded cheese, heavy cream, garlic powder, salt, and pepper.
  5. Transfer the mixture to a greased baking dish, sprinkle additional cheese on top, and bake for an additional 15-20 minutes, until bubbly and golden brown.
  6. Garnish with parsley before serving.
