Spaghetti Squash Au Gratin

  • 1 medium spaghetti squash
  • 2 cups shredded cheese (such as cheddar or Gruyere)
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup breadcrumbs

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Place the squash cut side down on a baking sheet and bake for about 30-40 minutes until tender.
  4. Once cooked, use a fork to scrape the strands of squash into a large bowl.
  5. In a separate bowl, mix cream, spices, and half of the cheese.
  6. Combine the cheese mixture with the spaghetti squash.
  7. Transfer to a greased baking dish and top with the remaining cheese and breadcrumbs.
  8. Bake for an additional 20-25 minutes until golden and bubbly.

Notes

  • For an extra kick, add some cayenne pepper to the cheese mixture.
