  • 1 pound breakfast sausage
  • 1 cup milk
  • 1/4 cup all-purpose flour
  • 1 teaspoon black pepper
  • 8 large eggs
  • 1 cup shredded cheese
  • 8 tortillas

Instructions

  1. In a skillet, cook the sausage over medium heat until browned.
  2. Add flour and stir well, then gradually add milk while stirring to avoid lumps.
  3. Season with black pepper and simmer until thickened.
  4. In a bowl, whisk eggs and scramble them in a separate pan.
  5. Lay tortillas flat, fill with scrambled eggs and cheese, roll up, and place in a baking dish.
  6. Pour sausage gravy over the enchiladas and bake at 350°F for 20 minutes.
