Smashed Carrots

  • 1 pound carrots
  • 2 tablespoons olive oil
  • 2 slices turkey bacon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the carrots and cut them in half lengthwise.
  3. Place the carrots on a baking sheet and drizzle with olive oil, salt, and pepper.
  4. Bake for 25-30 minutes until tender.
  5. While carrots are baking, chop the turkey bacon and cook in a skillet until crispy.
