Ingredients

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups egg noodles
  • 1 cup frozen peas

Instructions

  1. Season the beef with salt and pepper.
  2. In a skillet, heat olive oil over medium heat and brown the beef on all sides.
  3. Transfer the beef to the slow cooker.
  4. Add chopped onion, garlic, and beef broth to the slow cooker.
  5. Cover and cook on low for 6-8 hours or until the beef is tender.
  6. Remove the beef and shred it with two forks.
  7. Return shredded beef to the slow cooker and stir in egg noodles and peas.
  8. Cover and cook for an additional 30 minutes or until noodles are cooked.
