Shepherd’s Pie Soup Recipe

A comforting and delicious shepherd’s pie soup made with turkey bacon.

Ingredients

  • 4 slices turkey bacon
  • 1 lb ground turkey
  • 1 cup diced onion
  • 2 cups diced carrots
  • 2 cups diced potatoes
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 2 tbsp tomato paste
  • 2 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • salt to taste
  • black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add ground turkey to the pot and cook until browned.
  3. Add onions, carrots, and potatoes. Cook for 5-7 minutes.
  4. Stir in chicken broth, frozen peas, tomato paste, Worcestershire sauce, and thyme. Bring to a boil.
  5. Reduce the heat and simmer for 20-25 minutes until vegetables are tender.
  6. Season with salt and pepper. Serve hot, topped with crumbled turkey bacon.

Notes

  • For a richer flavor, add a splash of red wine.
  • This soup is great for meal prep and freezes well.
