Sheet Pan Chicken Pitas with Herby Ranch

A quick and flavorful recipe for sheet pan chicken pitas served with a herby ranch dressing.

  • 1 pound boneless, skinless chicken breasts
  • 2 teaspoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 pita breads
  • 1 cup lettuce, shredded
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumbers, diced
  • 1/4 cup herby ranch dressing

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, toss the chicken breasts with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  3. Spread the chicken on a sheet pan and roast for 20-25 minutes until fully cooked.
  4. While the chicken is cooking, prepare the pitas by warming them in the oven for the last 5 minutes.
  5. Once the chicken is cooked, slice it and fill the pitas with chicken, lettuce, tomatoes, cucumbers, and drizzle with herby ranch dressing.

Notes

  • Feel free to add more veggies to your pitas according to your preference.
  • This dish can be served warm or cold.
