Scrambled Egg Muffins

These scrambled egg muffins are a quick and easy way to enjoy a healthy meal packed with turkey bacon and veggies!

  • 1 cup chopped spinach
  • 1/2 cup diced bell peppers
  • 1/2 cup diced tomatoes
  • 1 cup cooked turkey bacon, chopped
  • 1/2 cup shredded cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs, salt, and black pepper.
  3. Add in the chopped spinach, bell peppers, tomatoes, turkey bacon, and shredded cheese, mixing well.
  4. Grease a muffin tin and pour the mixture evenly into each cup.
  5. Bake for 20-25 minutes or until the muffins are set and lightly golden.
  6. Let cool for a few minutes before removing from the muffin tin.
