These roasted garlic and parmesan carrots are a delicious and easy side dish that make for a perfect addition to any meal. The combination of garlic, parmesan cheese, and roasted carrots will elevate your dining experience!

  • 2 pounds baby carrots
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the carrots, garlic, olive oil, salt, and pepper.
  3. Toss the mixture until the carrots are well coated.
  4. Spread the carrots evenly on a baking sheet.
  5. Roast in the oven for 25-30 minutes, stirring halfway through, until tender and slightly caramelized.

  7. Return to the oven for an additional 5 minutes, until the cheese is melted.
