- 1 pound carrots, peeled and cut into sticks
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated parmesan cheese
- 2 tablespoons fresh parsley, chopped
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the carrots, minced garlic, olive oil, salt, and pepper.
- Toss until the carrots are evenly coated.
- Spread the carrots in a single layer on a baking sheet.
- Roast for 20-25 minutes, until tender and slightly caramelized.
