Roasted Garlic and Parmesan Carrots

Deliciously roasted carrots, infused with garlic and topped with parmesan.

Ingredients

  • 1 pound carrots, peeled and cut into sticks
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the carrots, minced garlic, olive oil, salt, and pepper.
  3. Toss until the carrots are evenly coated.
  4. Spread the carrots in a single layer on a baking sheet.
  5. Roast for 20-25 minutes, until tender and slightly caramelized.
  6. Remove from the oven and sprinkle with parmesan cheese and parsley.
  7. Return to the oven for an additional 5 minutes, until the cheese is melted.
  8. Serve warm as a side dish.
