  • 1 cup cake flour
  • 1 ½ cups sugar
  • 12 egg whites
  • 1 teaspoon cream of tartar
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, sift together the cake flour and half of the sugar.
  3. In another bowl, beat the egg whites with cream of tartar and salt until soft peaks form.
  4. Gradually add the remaining sugar and continue beating until stiff peaks form.
  5. Fold in the flour mixture and vanilla extract carefully.
  6. Gently fold in fresh raspberries.
  7. Pour the batter into an ungreased tube pan and smooth the top.
  8. Bake for 30-35 minutes until golden and springy to the touch.
  9. Invert the pan and cool completely before removing the cake.
