Quick Weeknight Zucchini and Rice Casserole

A comforting and fast recipe that brings together zucchini, rice, and turkey bacon for a delicious weeknight dinner.

Ingredients

  • 2 cups zucchini, diced
  • 1 cup rice
  • 4 slices turkey bacon, chopped
  • 1 cup cheese, shredded
  • 1/2 cup onion, diced
  • 2 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the turkey bacon until crispy.
  3. Add onions and zucchini to the skillet and sauté until tender.
  4. Stir in the rice, chicken broth, garlic powder, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Transfer to a casserole dish and top with cheese.
  7. Bake in the oven for 20 minutes until the cheese is melted and bubbly.

Notes

  • For extra flavor, add Italian seasoning to the mixture.
