Quick Mediterranean Tuna Salad with No Mayo

A refreshing and healthy tuna salad that is perfect for a quick meal without the heaviness of mayonnaise.

Ingredients

  • 2 cans tuna in olive oil, drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup Kalamata olives, pitted and sliced
  • 2 tablespoons capers, rinsed and drained
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • salt to taste
  • pepper to taste

Instructions

  1. In a large bowl, combine the drained tuna, cherry tomatoes, cucumber, red onion, olives, and capers.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
