  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda

  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/2 cup chopped walnuts
  • 1/2 cup streusel topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix pumpkin puree, sugars, and oil until smooth.
  3. Add in the eggs and combine thoroughly.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and spices.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the walnuts and pour the batter into the prepared loaf pan.
  7. Sprinkle the streusel topping evenly over the batter.
  8. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool in the pan for 10 minutes before transferring to a wire rack.
