Pumpkin Cottage Cheese Bake

  • 2 cups pumpkin puree
  • 1 cup cottage cheese
  • 1/2 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 1/2 cups crushed graham crackers
  • 1/4 cup melted butter

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, cottage cheese, sugar, eggs, vanilla extract, cinnamon, nutmeg, and salt until well combined.
  3. In another bowl, combine crushed graham crackers and melted butter.
  4. Press the graham cracker mixture into the bottom of a baking dish.
  5. Pour the pumpkin mixture over the crust in the baking dish.
  6. Bake for 45-50 minutes or until set.
  7. Let cool before serving.
