  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 cup chocolate chips

Instructions

  1. In a mixing bowl, combine the dry ingredients: flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  2. In another bowl, mix the wet ingredients: pumpkin puree, milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in chocolate chips.
  4. Preheat a skillet over medium heat and lightly grease with butter.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  7. Serve warm with maple syrup.

Notes

  • For fluffier pancakes, do not overmix the batter.
  • You can substitute the chocolate chips with nuts for a different flavor.
