1 cup pumpkin puree
1 cup all-purpose flour
1 cup brown sugar
1/2 cup granulated sugar
1/2 cup vegetable oil
3 large eggs
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
In a mixing bowl, combine pumpkin puree, brown sugar, granulated sugar, and vegetable oil. Mix well.
Add eggs one at a time, mixing thoroughly after each addition.
In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Gradually fold the dry ingredients into the wet mixture until just combined.
Pour the batter into the prepared baking pan and spread evenly.
Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
While the bars are baking, prepare the frosting by whisking together brown sugar, butter, and milk in a saucepan over medium heat until melted and combined.
Remove from heat and stir in powdered sugar until smooth.
Allow bars to cool before spreading the frosting on top.
