Potato and Sausage Chowder

A creamy and hearty potato and sausage chowder that is perfect for cozy dinners.

Ingredients

  • 4 cups diced potatoes
  • 1 pound sausage
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a large pot, cook the sausage over medium heat until browned. Remove and set aside.
  2. Add onion and garlic to the pot, sauté until softened.
  3. Add the diced potatoes and chicken broth; bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Stir in the heavy cream, reserved sausage, salt, pepper, and thyme; cook for an additional 5 minutes.
  6. Serve hot, garnished with parsley.

Notes

  • For a spicier kick, use spicy sausage.
  • Can be made a day ahead and reheated.
