  • 1/2 cup pomegranate juice
  • 1/4 cup fresh orange juice
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 cup pomegranate seeds

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small saucepan, combine pomegranate juice, orange juice, and honey over medium heat; simmer until slightly thickened.
  3. Pat salmon fillets dry and season with salt, pepper, garlic powder, and onion powder.
  4. Heat olive oil in an oven-safe pan over medium-high heat and sear the salmon for 3-4 minutes on each side.
  5. Pour the pomegranate glaze over the salmon and transfer the pan to the oven.
  6. Bake for 10-12 minutes, or until salmon is cooked through.
