Poblano Chicken Tortilla Soup

A comforting bowl of Poblano Chicken Tortilla Soup that is easy to make and perfect for any day.

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 poblano peppers, diced
  • 3 cloves garlic, minced
  • 1 pound chicken breast, diced
  • 6 cups chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup corn, frozen or canned
  • 1 lime, juiced
  • 1/4 cup cilantro, chopped

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and poblano peppers, and cook until softened.
  3. Stir in the garlic and sauté for 1 minute.
  4. Add the chicken and cook until no longer pink.
  5. Pour in the chicken broth and diced tomatoes, then mix in the spices.
  6. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
  7. Add corn, lime juice, and cilantro, and cook for an additional 5 minutes.
  8. Serve hot with tortilla strips on top.

Notes

  • For added spice, include chopped jalapeños.
  • Top with avocado for a creamier texture.
