One Pot Fall Vegetable Orzo and Chickpeas Recipe

A comforting and wholesome dish perfect for autumn nights.

Ingredients

  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 can chickpeas, drained and rinsed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup butternut squash, diced
  • 1 cup kale, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion and minced garlic, sauté until onion is translucent.
  3. Add butternut squash, broth, orzo, thyme, salt, black pepper, and red pepper flakes. Stir well.
  4. Bring to a boil, then reduce heat to low and cover. Simmer for 10-12 minutes or until orzo is cooked and liquid is absorbed.
  5. Stir in chickpeas and kale, cover, and cook for an additional 5 minutes.
  6. Remove from heat, let sit for a few minutes, then serve warm.

Notes

  • Feel free to substitute seasonal vegetables based on preference.
