  • 4 roasted poblano peppers
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon cumin
  • salt to taste
  • pepper to taste

Instructions

  1. Roast the poblano peppers until charred and blistered, then remove the skins and seeds.
  2. Heat olive oil in a pot and sauté the diced onion until translucent.
  3. Add minced garlic and cook for another minute.
  4. Chop the roasted peppers and add them to the pot.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce heat and simmer for 15 minutes.
  7. Blend the soup until smooth, then return to the pot.
  8. Stir in the heavy cream, cumin, salt, and pepper.
  9. Heat through and serve hot.

Notes
