Mexican Street Corn Pasta Salad

A delicious and healthy take on Mexican street corn, combined with pasta and turkey bacon for a flavorful salad.

Ingredients

  • 8 ounces rotini pasta
  • 4 slices turkey bacon
  • 1 cup corn, grilled or canned
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped cilantro
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt

Instructions

  1. Cook rotini pasta according to package instructions; drain and set aside.
  2. In a skillet, cook turkey bacon until crispy; chop into pieces.
  3. In a large bowl, combine cooked pasta, turkey bacon, corn, red onion, bell pepper, feta cheese, and cilantro.
  4. In a small bowl, mix mayonnaise, lime juice, chili powder, and salt; pour over the salad.
  5. Stir until well combined and serve chilled.

Notes

  • For extra flavor, add diced avocado on top before serving.
  • Can be made a day ahead for easier meal prep.
