Mexican Ground Beef and Potato Skillet

A delicious one-skillet meal featuring seasoned ground beef and tender potatoes.

Ingredients

  • 1 pound ground beef
  • 2 medium potatoes, diced
  • 1 cup diced bell peppers
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup beef broth
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground beef and cook until browned.
  3. Add onion and garlic, and sauté until soft.
  4. Stir in potatoes, bell peppers, chili powder, cumin, salt, and pepper.
  5. Pour in beef broth and bring to a simmer.
  6. Cover and cook for 20-25 minutes until potatoes are tender.
  7. Serve warm and enjoy!
