Lemon Dill Cabbage Soup

A deliciously refreshing soup combining the flavors of lemon and dill with turkey bacon.

Ingredients

  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 3 cups green cabbage, shredded
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 cup carrots, diced
  • 2 cups potatoes, diced
  • 2 tablespoons fresh dill, chopped
  • 2 lemons, juiced
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the turkey bacon and cook until crispy. Remove and chop.
  3. Add the onion and cook until translucent.
  4. Stir in the garlic and cook for an additional minute.
  5. Add the cabbage, carrots, and potatoes, cooking for about 5 minutes.
  6. Pour in the vegetable broth and bring to a boil.
  7. Reduce heat and simmer for 20 minutes.
  8. Stir in the chopped turkey bacon, dill, and lemon juice. Season with salt and pepper.
  9. Serve hot.

Notes

  • For a richer flavor, add a splash of lemon zest.
  • Can substitute turkey bacon with regular bacon for a different taste.
