  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup sour cream

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a bowl, mix the graham cracker crumbs and melted butter.
  3. Press the mixture into the bottom of a springform pan to create the crust.
  4. In a large mixing bowl, combine cream cheese and sugar until smooth.
  5. Add vanilla extract, eggs, lemon juice, and lemon zest, mixing until well combined.
  6. Pour the filling over the crust in the springform pan.
  7. Bake for 50-60 minutes until the center is set.
  8. Allow to cool, then refrigerate for at least 4 hours before serving.
