- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 4 cups Arborio rice
- 1 cup grated Parmesan cheese
- 4 cups chicken broth
- 2 tablespoons butter
- 2 tablespoons fresh parsley, chopped
- Season the chuck roast with salt and pepper. In a large pot, heat olive oil over medium-high heat. Add the roast and sear on all sides until browned.

- Gradually add chicken broth, stirring frequently until rice is creamy and cooked through. Stir in grated Parmesan and chopped parsley.
