  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 4 cups Arborio rice
  • 1 cup grated Parmesan cheese
  • 4 cups chicken broth
  • 2 tablespoons butter
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the chuck roast with salt and pepper. In a large pot, heat olive oil over medium-high heat. Add the roast and sear on all sides until browned.
  2. Add the chopped onion and minced garlic, cooking until softened.
  3. Pour in the beef broth and Worcestershire sauce. Bring to a boil, then reduce heat to low, cover, and simmer for 3 hours.
  4. For the risotto, in a separate pot, melt butter. Add Arborio rice and cook for 1-2 minutes until slightly toasted.
  5. Gradually add chicken broth, stirring frequently until rice is creamy and cooked through. Stir in grated Parmesan and chopped parsley.
  6. Serve the pot roast with a side of Parmesan risotto.
