Hobo Casserole Ground Beef

This Hobo Casserole combines ground beef and turkey bacon for a hearty, comforting dish that’s perfect for families.

Ingredients

  • 1 pound ground beef
  • 6 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups diced potatoes
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, cook the ground beef until browned. Drain excess fat.
  3. Add chopped onion and minced garlic to the skillet, cooking until softened.
  4. In a large baking dish, layer the diced potatoes, then pour the beef mixture on top.
  5. Pour in the can of diced tomatoes, spreading evenly.
  6. Top with turkey bacon and shredded cheese.
  7. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes, or until potatoes are tender.

Notes

  • For a spicy twist, add some diced jalapeños or a sprinkle of red pepper flakes.
  • Can substitute ground turkey for a lighter option.
