High Protein Broccoli Cheddar Soup

This delicious and hearty High Protein Broccoli Cheddar Soup features a savory turkey bacon twist, making it a perfect comfort meal.

Ingredients

  • 1 tablespoon olive oil
  • 4 slices turkey bacon, chopped
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 4 cups low-sodium chicken broth
  • 1 cup shredded sharp cheddar cheese
  • 1 cup milk
  • 2 tablespoons cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy, about 5 minutes.
  2. Add onions and garlic, and sauté until onions are translucent.
  3. Stir in broccoli and chicken broth. Bring to a boil, then reduce heat and simmer until broccoli is tender, about 10 minutes.
  4. In a bowl, whisk together milk and cornstarch until smooth. Stir into the soup and cook until thickened.
  5. Remove from heat, and stir in cheddar cheese until melted. Season with salt and pepper to taste. Serve warm.

Notes

  • For a creamier texture, blend part of the soup and return it to the pot.
  • Add more cheese for a cheesier flavor.
