  • 2 tablespoons fresh rosemary, chopped

  • 4 cloves garlic, minced

  • 1 lemon, halved

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix together the butter, rosemary, thyme, garlic, salt, and pepper.
  3. Rub the herb butter mixture all over the Cornish hens, including under the skin.
  4. Place the hens in a roasting pan and squeeze the lemon halves over them.
  5. Roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C).
  6. Let the hens rest for 10 minutes before serving.
