Herb Butter Roasted Cornish Hens

  • 2 Cornish hens
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, sliced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the softened butter with rosemary, thyme, garlic, salt, and pepper.
  3. Gently loosen the skin of the Cornish hens and spread the herb butter underneath.
  4. Season the outside of the hens with additional salt and pepper.
  5. Place lemon slices inside the hens.
  6. Roast the hens in the oven for 1 hour or until the internal temperature reaches 165°F (75°C).
  7. Let the hens rest for 10 minutes before serving.

Notes

  • For extra flavor, marinate the hens in the herb butter for a few hours before cooking.
