Hearty Cheddar Garlic Herb Potato Soup

  • 1 cup shredded cheddar cheese
  • 4 slices turkey bacon
  • 1 tablespoon minced garlic
  • 1 teaspoon dried thyme
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • salt to taste
  • black pepper to taste

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and crumble.
  2. In the same pot, sauté onions and garlic until translucent.
  3. Add diced potatoes, chicken broth, thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Stir in heavy cream and cheddar cheese, cooking until cheese is melted.
  6. Top with crumbled turkey bacon before serving.
