  • 2 cups almond flour
  • 1/2 cup protein powder
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 3 eggs
  • 1 teaspoon vanilla extract

  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, combine pumpkin puree, eggs, honey, coconut oil, and vanilla extract.
  3. In another bowl, mix almond flour, protein powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients until just combined.
  5. Fill the muffin liners about 3/4 full with batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool before removing from the tin.
