Ginger Scallion Chicken Noodle Soup

A comforting and flavorful chicken noodle soup that’s perfect for a cozy weeknight dinner.

Ingredients

  • 1 pound chicken thighs, boneless and skinless
  • 8 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 ounces rice noodles
  • 1/2 cup scallions, chopped
  • 2 tablespoons ginger, minced
  • 2 cloves garlic, minced

Instructions

  1. In a large pot, bring the chicken broth to a simmer and add the chicken thighs.
  2. Cook for about 20 minutes, until the chicken is cooked through. Remove the chicken and shred it.
  3. Add the salt, pepper, ginger, and garlic to the broth. Simmer for another 5 minutes.
  4. Meanwhile, cook the rice noodles according to package instructions.
  5. Add the shredded chicken, cooked noodles, and scallions to the broth. Stir well and serve hot.

Notes

  • For added flavor, you can use homemade broth.
  • Garnish with additional scallions before serving.
