- 2 cups elbow macaroni
- 4 cups beef broth
- 1 large onion, thinly sliced
- 4 slices turkey bacon, chopped
- 2 cups shredded Gruyère cheese
- 1 cup shredded cheddar cheese
- 3 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- Salt to taste
- Black pepper to taste
- Cook the macaroni according to package instructions and drain.
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add butter and sliced onions, and cook until onions are caramelized.
- Stir in flour and cook for 1 minute. Then, gradually whisk in beef broth.
- Add garlic powder, thyme, salt, and pepper. Bring to a simmer.
- Stir in the cheeses until melted and combined.
- Add the cooked macaroni and mix well.
- Top with crispy turkey bacon and serve.
Notes
- For a vegetarian version, use vegetable broth and omit turkey bacon.
- Feel free to add more cheese for extra creaminess.
