French Onion Chicken Orzo Casserole

  • 1 pound chicken breasts, diced
  • 1 cup orzo pasta
  • 2 cups beef broth
  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 cup Swiss cheese, shredded
  • 1/2 cup sour cream
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat and add the onions. Cook until caramelized.
  3. Add diced chicken and cook until browned.
  4. Stir in the orzo, beef broth, thyme, salt, and pepper. Bring to a boil.
  5. Transfer the mixture to a baking dish, mix in sour cream and half of the cheese.
  6. Top with remaining cheese and bake for 25-30 minutes.
  7. Let it cool for a few minutes before serving.
