- 1 pound chicken breasts, diced
- 1 cup orzo pasta
- 2 cups beef broth
- 1 large onion, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1 cup Swiss cheese, shredded
- 1/2 cup sour cream
- Salt and pepper to taste
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat and add the onions. Cook until caramelized.
- Add diced chicken and cook until browned.
- Stir in the orzo, beef broth, thyme, salt, and pepper. Bring to a boil.
