  • 2 cups sweet potatoes, peeled and diced
  • 6 strips turkey bacon
  • 1 cup chicken ham, diced
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 cup shredded cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the turkey bacon until crispy, then remove and crumble.
  3. In the same skillet, sauté the sweet potatoes until tender.
  4. In a bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder.
  5. In a greased baking dish, layer the sweet potatoes, crumbled bacon, chicken ham, and cheese.
  6. Pour the egg mixture over the top and bake for 30-35 minutes until set.
