Dark Chocolate Raspberry Cheesecake

A rich and decadent dessert combining dark chocolate and fresh raspberries.

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 8 ounces dark chocolate, melted
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. In another bowl, beat cream cheese and sugar until smooth. Add vanilla and eggs, one at a time, mixing well after each addition.
  4. Stir in the melted dark chocolate until fully combined.
  5. Pour the filling over the crust and smooth the top.
  6. Bake for 50-60 minutes, or until set. Let cool and refrigerate for at least 4 hours.
  7. Top with fresh raspberries before serving.

Notes

  • For a thicker cheesecake, use more cream cheese.
  • Ensure the dark chocolate is of good quality for the best flavor.
