Cucumber Edamame Salad

A light and refreshing salad perfect for warm days.

Ingredients

  • 1 cup edamame, shelled
  • 1 large cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. In a large bowl, combine the edamame, cucumber, red onion, and parsley.
  2. In a small bowl, whisk together the olive oil, rice vinegar, sesame oil, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving.
  5. Serve cold and enjoy!

Notes

  • For extra flavor, add sesame seeds on top before serving.
  • This salad can be made a day in advance for better flavor.
