Crockpot Vegetarian Tortilla Soup

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) diced tomatoes
  • 4 cups vegetable broth
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 jalapeño, chopped (optional)
  • 1 cup fresh cilantro, chopped (for garnish)

Instructions

  1. Heat the olive oil in a pan over medium heat. Add the onion and garlic, sauté until softened.
  2. Add the bell pepper, carrots, and celery, cooking for about 5 minutes.
  3. Transfer the mixture to a crockpot and add the black beans, corn, diced tomatoes, vegetable broth, cumin, chili powder, smoked paprika, salt, black pepper, and jalapeño (if using).
  4. Stir well to combine. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Serve hot, garnished with fresh cilantro.

Notes
