- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (28 oz) diced tomatoes
- 4 cups vegetable broth
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 jalapeño, chopped (optional)
- 1 cup fresh cilantro, chopped (for garnish)
- Heat the olive oil in a pan over medium heat. Add the onion and garlic, sauté until softened.
- Add the bell pepper, carrots, and celery, cooking for about 5 minutes.
- Transfer the mixture to a crockpot and add the black beans, corn, diced tomatoes, vegetable broth, cumin, chili powder, smoked paprika, salt, black pepper, and jalapeño (if using).
- Stir well to combine. Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Serve hot, garnished with fresh cilantro.
