Crockpot Chicken Gnocchi Soup

  • 1 pound boneless chicken breasts
  • 16 ounces gnocchi
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup spinach
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add the chicken broth, carrots, celery, Italian seasoning, garlic powder, onion powder, salt, and pepper. Stir to combine.
  3. Cook on low for 6 to 8 hours or high for 3 to 4 hours, until the chicken is cooked through.
  4. Remove the chicken and shred it, then return to the crockpot.
  5. Add the gnocchi and heavy cream, and stir well.
  6. Cook for an additional 30 minutes on high.
  7. Stir in the spinach just before serving and enjoy!
